About Dairy Free Fudge
There are two types of fudge:
Devon Set Devon set is creamy, smooth and soft. Scottish Set Scottish fudge is cooked at higher temperatures and results in a harder more crumbly texture.
Our fudge is Devon set.
Our fudge is made in small 60 kg batches. We still use a double jacket copper
boiler. The water running through the inner and outer surface cools the fudge
slowly which allows for a creamy texture to develop.
You may notice some colour variation between packets, this is due to various things- it could be a temperature variation in the atmosphere whilst cooking the different batches. It could be a variation of moisture content in the air. We choose to keep the variations – it does not affect the taste and is part of the hand batched process. Our Coconut Ice looks different!!
We look at every detail and our aim is to produce a product which has that great
traditional taste.
